The 7 principles of HACCP, done right

HACCP is a systematic approach to food safety built on seven principles from Codex Alimentarius. Each one means something specific in practice, and each is a place plans fall short.

Conduct a hazard analysis

Identify every biological, chemical, and physical hazard for your products. A facility-specific analysis of your ingredients, process, and environment, not a template copy. This is where most plans fall short.

Determine critical control points

Find the process points where control is essential to prevent or reduce a hazard. Not every step is a CCP. Misjudging them means wasted monitoring or real risk.

Establish critical limits

Set the measurable boundary for each CCP: temperature, time, pH, water activity. Limits must rest on scientific evidence or regulation, never guesswork.

Establish monitoring procedures

Define how, when, and by whom each CCP is checked, often enough to catch a deviation before affected product leaves your control.

Establish corrective actions

Pre-plan what happens when a limit is exceeded: who is notified, what happens to the product, how the process is brought back in control.

Establish verification procedures

Confirm the plan actually works through calibration checks, record reviews, testing, and periodic reassessment.

Establish record-keeping

Document monitoring, corrective actions, verification, and the plan itself, retained per regulation. Beacon handles this as a byproduct of the work.

Common questions about plan development, the 7 principles, and working with our team.

Every engagement is scoped, and a few things drive the effort: how many distinct products and processes you run, whether you are building a plan from scratch or correcting an existing one, and how complex your hazards are. A single process line is a very different build from a facility with ten product families. After a discovery call and a plan review you get a specific number for your facility, not a rate-card guess.
Not necessarily. Products with similar hazards and processes can be grouped under one HACCP plan. Five flavors of the same sauce made on the same process can share one plan with the right scope. We help you decide the right grouping strategy so you maintain fewer plans, not more.
At minimum, annually. The plan should also be reassessed whenever something significant changes: a new product, new equipment, a process modification, an ingredient change, or a new regulatory requirement. Inside Beacon, plan reassessments are triggered and tracked automatically instead of relying on someone to remember.
A CCP is a point in the process where control is essential to prevent a hazard. A prerequisite program, like sanitation or pest control, supports food safety but is not tied to a specific process step. A common mistake is labeling everything a CCP, which leads to over-monitoring and dilutes focus on the points that truly matter.

Many facilities have plans written years ago by a previous consultant that never kept pace with process changes, new products, or evolving standards.
